在位于繁华都市商业体内的拾捌道餐厅,设计师以四季变化的新鲜食材元素为背景,完美呈现了潮汕食材四季轮回的独特美食时空之旅。拾捌道砂锅金勾翅,顾名思义就是这道招牌菜的制作工序非常的繁琐复杂,从食材的采购、发制、熬汤、配料、到呈现在餐桌上,一系列经过18道完美工序完成的,“拾捌道”的名字就是由其18道制作工序而来。

In the Eighteen Restaurant located in the bustling city's commercial district, the designer uses the theme of seasonal ingredients to present a unique food experience that showcases the cuisine of Chaoshan, with its rotating cycle of four seasons. The signature dish, Eighteen Dish Casserole with Golden Hook Fish, is aptly named due to its intricate and complex preparation process. From the procurement of ingredients, hair-raising, making the broth, seasoning, to its presentation on the dining table, it undergoes a perfect 18-step process. The name "18 Courses Restaurant" comes from this 18-step cooking process.

四水归堂-围合

Four Waters Returning to the Hall- Siege

四水归堂的设计理念贯穿于大堂的设计元素之中,四柱围合形成中景下沉的水景。设计师刻意刻画出水汇聚于堂屋之中,至善至和,从缝隙寻一静谧。围合的方柱运用了两种木的肌理,形成深浅轮廓,使造型更加富有张力。视觉上传达四水归堂的理念,即四季轮回,万物归于安宁。

The design concept of "Four Waters Returning to the Hall" is implemented throughout the lobby design elements. The four columns surround the water feature in the center, which sinks in the middle. The designer deliberately portrays the water converging in the hall, which is the ultimate harmony and tranquility. The enclosing square columns use two kinds of wood textures to create a deep and shallow outline, making the design more tensioned. Visually, it conveys the concept of "Four Waters Returning to the Hall", which symbolizes the cycle of the four seasons and all things returning to tranquility.

天花以浅色木为主进行延伸,垂钓式的吊灯使光源的照射光晕反射于天花,光晕似水花形成谍影,予以水为上至下,象征着自然规律有条不紊的发展和运作。

The ceiling is mainly extended with light-colored wood, and a suspended lamp with a fishing-style design reflects the illuminated glow onto the ceiling, forming an illusion of water splashing and dripping, symbolizing the orderly development and operation of natural laws from top to bottom.

白色石材墙面与麻石地面的铺陈,使整体空间弱化装饰性的效果,朴素的质感提升空间感官的舒适性与和谐度。朴实无华的肌理往往能让人产生情绪共鸣,在幻变不定的万象中,探寻设计本真。

The use of white stone walls and hemp stone floors minimizes the decorative effect of the overall space, enhancing its sensory comfort and harmony through a simple texture. The understated texture often resonates with people's emotions, allowing them to explore the essence of design amidst the constantly changing world.

手工雕刻板的落地门与黄铜雕刻的门把手形成色彩与质感的碰撞,做旧的泼墨宣纸刻画时代的风格印记,年轮依始,再是一轮轮回四季。

The hand-carved floor-to-ceiling door and the brass-carved doorknob collide in color and texture. The old splashed ink paper portrays the style imprint of the times. The years continue to ring, then return to the four seasons.

春之况味-春生

The taste of spring - Chunsheng

春水初生,春林初盛,春雨中万物生长,春笋新发的嫩芽,会带来最清甜的味道。在熟悉的食材中,找到新鲜的味蕾,在春季,菜单上的菜肴都呈现出嫩绿的新鲜感。

In spring, the first signs of life emerge, with the birth of new leaves on the trees and the growth of all things in the rain. The newly sprouted shoots of bamboo are a fresh and sweet treat. Among familiar ingredients, we find new flavors on the palate. In spring, the dishes on the menu all exude a vibrant green freshness.

状垂涎的大吊灯,在照明功能与意蕴的衔接上,达到通达效果。将敬酒——将敬而饮,美食配美酒,礼遇而与朋之畅饮畅谈畅食,实属人生乐事,如此生动。

The umbrella-shaped drooping chandelier achieves a connecting effect between its lighting function and its meaning, bringing a lively atmosphere to the space. Toasting - toasting and drinking, pairing fine food with fine wine, treating friends to a hearty meal and conversation - is truly a joyful experience in life. So vivid and lively.

不如食夏-夏长

The taste of summer- long summer

夏季,气温逐渐升高,应季而食的习惯刻在食客的基因里。而人们也怀着对食物的理解和敬畏,意图通过不断尝试和创新,将非凡的灵感融入简单的食材烹饪中。

In summer, as temperatures gradually rise, the custom of seasonal cuisine is ingrained in the DNA of food lovers. People also hold a deep understanding and respect for food, attempting to infuse extraordinary inspiration into the cooking of simple ingredients through continuous experimentation and innovation.

山姜、香菜等调味品赋予菜肴深刻的层次感和独特的口味,当季的时蔬食材又却让人垂帘三尺。空间以金箔墙面屏风为主色调,黄色洞石代表着夏之灿烂,而每一道菜都如金黄的宝石一样璀璨。

Seasonal ingredients such as ginger, coriander and other seasonings impart profound layers of flavor and unique taste to dishes, while the latest vegetables are mouth-watering. The space features a golden-hued screen wall as its main color, with yellow polished stone representing the splendor of summer. Each dish is like a golden gem, sparkling and resplendent.

秋实予收-秋收

The taste of autumn - harvest in autumn

秋之菩提,应予吊灯元素,深紫色的使空间与人以长久的感悟,看似杂乱无章的大幅挂画,寓意丰收的季节已经来临。应时而食,不时不食,不如入秋而食。从美味的海鲜到精致的肉类,每一口都像秋天的阳光一样温暖而满足。以应季鲜食,烹饪滋补解燥的平容之味,融潮汕好味于腹胃,共赞秋实之歌。

The seemingly chaotic large hanging painting symbolizes the arrival of the season of abundant harvest. Eat according to the season, eat what is in season. 冬季,万物入冬而眠,新鲜食材需以藏为鲜,新年伊始,故壤之甜。火焰的色调赋予冬天温暖和滋补,入冬,食材以温润进补而广为食客之迎。此刻把握自然韵律与一呼一吸之间的联接在五感的极致满足中不断切换一场有关自我的变奏皆在回眸一瞬被发现。

In winter, everything hibernates, and fresh ingredients need to be kept fresh. At the beginning of the new year, the soil is sweet. The color of the flame gives warmth and nourishment to winter. In winter, the ingredients are warm and nourishing, and are widely welcomed by diners. 18 Courses Restaurant is a food tour that specializes in presenting the seasonal cycle of Chaoshan ingredients. It introduces diners to the natural environment and experiences the beauty of harvest and hope. It offers more than just delicious food, a unique dining experience that allows them to take a break from their busy lives and enjoy the food and quiet time.

食材不止是食材,而是轮换四季而生的期待,更是一场专业化的味蕾探险。潮汕地区以其独特的食材和烹饪技巧而闻名,而这里的厨师们是这一传统的传承者,他们把它推向了新的高度。每一季的菜肴都有不同的特色,带给食客四季交替的美味。
